Spicy Peanut Noodles

I really love Thai food, and unfortunately I have yet to find a Thai restaurant near where I live.  Since I've developed a love of cooking, I've sort of adopted the motto of if you can't find it... cook it yourself!

Spicy Peanut Noodles:


for the sauce:
1/4 cup soy sauce or liquid aminos
2 T peanut butter
2 T sweet red chili Asian sauce
1 t fresh garlic, minced
2 t hot sauce
1/4 t ground ginger

for the noodles:
1 T olive oil
1 box pad thai rice noodles
2 eggs

for garnish:
chopped green onions
chopped peanuts
bean sprouts

Fill pot with water for the noodles, adding a tablespoon of olive oil to the water.  This is an important step to make sure the noodles won't stick together.
Cook noodles as per package.
Combine all sauce ingredients in a food processor and puree.


Begin warming a skillet on medium heat on top of the stove.
Drain noodles when done cooking.
Pour sauce over noodles.
Crack eggs into skillet and begin to scramble, chopping the eggs up with the spatula as you cook.  As soon as the egg stops being runny, mix it into the noodles.
Serve noodles, garnishing with green onions, peanuts, and bean sprouts.
