Banana Soft Serve

Around 8 pm every night I crave one thing and one thing only: ice cream.  Long gone are the days when I ran track and could have a bowl of ice cream every night like I did in high school.  I don't even buy ice cream anymore for fear that I'll eat half a carton in one sitting. So I set out to find a solution to the ice cream craving, dairy free!


Chocolate-Peanut Butter-Banana Soft Serve
You'll need:
  • Two frozen bananas
  • 1/2 cup almond milk
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon agave
  • 1 teaspoon ground cinnamon
  • Either a small handful of chocolate chips OR 1 leftover brownie
  • 2 tablespoons of peanut butter OR almond butter
Blend or food process all ingredients on high.  You'll never know that you're eating a low fat, low sugar combination of sweetness instead of regular old ice cream.  Added bonus?  It's the perfect solution to those over-ripe, forgotten bananas that you didn't have time to eat and have now become almost completely brown-- just freeze and use for soft serve!

Other suggestions:
- Add fruit instead of chocolate and PB.
- Use chocolate almond or soy milk instead of cocoa powder and agave. 
- Use a tablespoon of Nutella instead of PB or instead of the other chocolate ingredients. 
- Stir in some coconut or graham cracker crumbs for a little crunch.
- Stir in some ground flax or wheat germ to up the health factor. 
- Add granola as a topping.

This could easily become a morning smoothie if more almond milk is added.
