Sprig & Vine: New Hope, PA

A few weekends ago I met up with my college roommate, Emily, who I haven't seen since we graduated.  That's two years, and really two years too long.

We met halfway in New Hope, Pennsylvania at a restaurant called Sprig & Vine, which is a completely vegan restaurant that serves brunch and lunch.  Badly-lit-photo warning:


While neither of us is a true vegan, we've both dabbled in the world of being vegetarian and try our best to eat as healthy as possible.


I had the Blueberry Compote French Toast with lemon cardamom cream.


Emily had the Breakfast Burrito (without the burrito) -- scrambled tofu, potato, black beans, avocado, salsa verde, and smoked paprika aioli.  


Brunch was delicious, then we headed out into the town of New Hope to do some shopping.  It was great to spend the day with a good friend who I haven't seen in a while.  Living in New England for the past two years, it's been hard to actually meet up with my closest college friends, as they are still in PA where we went to school; however, it's even that more wonderful when I finally get to see their faces and we fall back into step, still the same friends we always were.  I only wish we had gotten someone to take our picture!  Here's a throwback photo:


There were a lot of college pics to choose from, but we're clearly representing here.  I miss you, Em!

It makes me very happy when I can showcase a restaurant on the blog that is unique and supports local farmers and merchants.  I grew up in NJ, went to college in PA, med school in ME, and will spend the next year in NH and bouncing down to CT every so often.  That's a lot of states to be familiar with, and that means lots of opportunities to find great spots to eat!  I hope to add a page just for restaurants to the blog to share these places with all of my readers!
