Easy Monday: Spicy Black Beans

Today's Easy Monday is a very simple concept.  Drain and rinse a can of black beans, add your favorite spices, heat, and serve.

I used a little bit of salt, pepper, garlic powder, cumin, and cayenne pepper.  Feel free to use whatever flavors you like.  


This little pot of black beans lasts up to 4 days in the fridge and has endless uses:
  • As a side dish
  • In a burrito or tacos
  • In a salad
  • Over rice
  • Mixed into a stir fry
I had them as a side dish for a couple of nights then threw the last remains into a burrito.  To reheat, just add a splash of water to the beans and heat on the stove for a few minutes.


This is my typical dinner four nights a week.  I plan on posting about roasting portobellos next week.
