Vegetable Crisis

Every year we celebrate Christmas Eve with my mom's side of the family.  For the past 2 years I have been in charge of any and all vegetable dishes that we serve (how appropriate!)  We have a lot of different appetites and preferences, so I planned on making 4 different kids of veggies.  Only when we got to my grandma's house, we discovered her oven did NOT want to cooperate.

I had high hopes for these potatoes.  I even did a test run on the 23rd to make sure they turned out okay:





Unfortunately I had to improvise and just make regular old baked potatoes on the grill in the backyard.

Luckily my other vegetable dishes didn't suffer.  My dad lives up the road from my grandma and he wasn't using his oven-- his amazing Viking oven that I use at every possible chance I get.  So I roasted two dishes of veggies over at his house.

Brussel sprouts with butter, sea salt, and pepper:


A very orange-colored dish of sweet potatoes, carrots, delicata squash, and golden beets with olive oil, sea salt, pepper, and chopped fresh garlic:


I forgot to take some "after" photos in my rush to drive the veggies back to my grandma's.  They both turned out really well!  If you're gagging at the sight of my brussels, come over and I'll convert you to a sprouts lover.

Dinner turned out perfectly fine despite our oven crisis.  And I received a much needed gift to bring back up to my house in Maine:

If I was a character from "Friends," I'd definitely be Monica.  Hands down.
