Bacon Egg Cups

I'm tired of regular old bacon and eggs.  Let's try something new: recipe adapted from here.

Spray a muffin tin with cooking spray (I use Smart Balance)
Line each cup with a slice of bacon.  No muffin tins needed here!
Whisk together 3 eggs, a drop of half and half, 2 T of Parmesan cheese, salt, and pepper.
Fill each bacon cup 3/4 of the way with the egg mixture.
Bake for 30 minutes at 350 degrees F. 

Clearly I wasn't so precise with filling each tin the same amount...

The result was a fluffy egg "muffin" with the perfect amount of bacon for each bite. 

I'm jamming later on today.  Homemade raspberry and blackberry jam, that is, right after I take my last didactic med school exam ever.  Then it's on to clinicals for us!
