Fact #1: Yesterday was a gross and rainy day outside.
Fact #2: This is my new favorite food obsession:
Opinion: On gross, rainy days when you have delicious coconut almond milk in the fridge, you must make rainy day hot chocolate.
Coconut Almond Milk Hot Chocolate
you'll need:
- 1 and 1/4 cups of coconut almond milk, unsweetened
- 4 teaspoons of unsweetened cocoa powder
- 1 T peanut butter
- 1 T agave
- 1 teaspoon maple syrup
- 1/2 teaspoon vanilla extract
Combine all ingredients in a small saucepan and whisk like crazy until combined. Keep the hot cocoa on low to medium heat (to avoid burning) until just boiling. Pour into a mug and enjoy instead of going anywhere outside in the rain.

Yum. Let's just hope the leftover jar of Nutella lasts more than 2 days!
