Simple White Bean Turkey Chili

Here are two convenient things about making chili: it's pretty cheap and it lasts all week if you're only cooking for one.  These are important factors when busy people want to cook their own food, and I've had a few fellow students ask for recipes they can make on the weekend and eat all week.  Here you go:


White Bean Turkey Chili
you'll need:
  • 1.5 T olive oil
  • 1 lb ground turkey
  • 1 large onion
  • 2 cloves of garlic
  • 1 cup chicken broth
  • 1 cup water
  • 1 28 oz. can crushed tomatoes
  • 1 15.5 oz. can white beans (canellini, great northern, etc.)
  • 2 T chili powder
  • 1/2 t cumin
  • 1/2 t cayenne pepper
  • 1/2 t paprika
  • 1/2 t salt
  • 1/2 t black pepper
Heat olive oil in a large pot.  Add turkey and cook until browned evenly.  Add onion and garlic and cook another 5 minutes.  Add all other ingredients, bring to a boil, then turn heat to low, cover, and simmer for 30 minutes.  


Serve with multi-grain tortilla chips and cornbread: my favorite cornbread recipe is here, and I add a chopped jalepeno pepper, seeds, ribs and all, to give it more heat.
